Our hosts selected three Napa Valley Wines from Spirit World in Omaha for a blind taste test-- all were Cabernet Sauvignon.  Guests were to identify the wines by least and most expensive wines.

 

  The three wines were:

  Cecchetti Sebastiani Chardonnay 2000
Sebastiani, former president of Sebastiani Vineyards, founded the operation with brother-in-law Roy Cecchetti in 1985. Today the Sonoma-based company bottles nearly 600,000 cases of these two brands annually (at press time, Sebastiani was in the process of buying out Cecchetti). While Cecchetti-Sebastiani has a small line of Napa Valley wines, the label focuses on North Coast and Central Coast wines priced in the $12 to $15 range.

The Napa Valley Cabernet Sauvignon is a supple wine, exhibiting aromas of cassis, currant and raspberry. A small percentage of grapes are whole berry fermented, contributing a softness in the tannin structure and an added richness, polished texture and earthy body. This wine pairs well with roasted meats, particularly when served with a berry or currant reduction sauce. Wild mushroom risotto or any dish featuring Portabello mushrooms would be a great match with the earthy characteristics of this wine.
