Vegetable Roast
Cooking Light Jan/Feb 2003 -- Introduced by BNS
1 C fresh basil
1/4 C fresh mint
2T olive oil
1T soy sauce
1T Italian seasoning
1 t curry powder
1/2 t salt
3 garlic cloves, halved
1 jalapeno pepper, halved (I used
green chilies)
2 C cauliflower florets
2 C broccoli florets
1 1/2 C fennel bulb (I couldn't find
so just used fennel seed)
1 C each red, yellow and green bell pepper
1 thin sliced red onion
1 medium tomato, sliced
1. Heat oven to 450.
2. process first 9 ingredients in a food processor until smooth
3. Combine mixture with cauliflower-onion and toss
4. Arrange in flat pan sprayed with Pam and bake for 15 minutes until el'dente
( or to taste)
5. Add tomatoes ( I used four roma) and bake 5 more minutes.
You can serve this over rice or as a side
dish.
