The Eskimo Pie was patented by of Danish-born teacher from Onawa, Iowa ice cream shop Christian Nelson on January 24, 1922. He was inspired by an indecisive boy named Douglas Ressenden, who could not decide between ice cream and chocolate while in a candy shop co-owned by Nelson. He decided that he needed a novel product that would satisfy both cravings. Nelson spent several months trying to develop the correct formulation. He consulted with Russell Stover whom he met by accident while visiting his attorney to work on the patent rights for his new confection, the Temptation "I-Scream Bar". Stover gave several helpful suggestions for improving the product and a partnership was formed. Stover felt the product needed a better name, so Nelson and his sister compiled a list of all words meaning "cold" and a list of dessert descriptions. The "Eskimo Pie" was born !

In 1922, the Eskimo Pie "confection", an ice cream centre covered in chocolate, was patented by Christian K. Nelson of Onawa, Iowa. (No. 1,404,539). The patent decribed the article as "in its simplest form, a block or brick or frozen confection within an edible container or shell. The core or center may be an ice cream, sherbet, sorbet, ice, or other material congealed by refrigeration." The shell was described as "like that used in coating chocolate candies, although preferably modified to harden at a lower temperature," and not too brittle.

 

The product reportedly saved the the Iowas dairy business during the Great Depression.  (AP, 1/24/98)(SFEC, 4/11/99, Z1 p.8)
