1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 ounces red food coloring
2 tablespoons cocoa
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla
2 ½ cups all-purpose flour
1 ½ teaspoons baking soda
1 tablespoon vinegar
Cream shortening, sugar and eggs, beat well.
Make a paste of the cocoa and food coloring and add to creamed mixture.
Mix salt, buttermilk and vanilla and add alternately with previous mixture
Mix baking soda and vinegar and add to batter
Bake in 2 round pans, grease sides and line bottoms with waxed paper 350 degrees for 25 minutes.
When cool split layers and frost between layers and top (not sides).
Waldof Red Cake Icing
5 tablespoons flour
1 ½ cup milk
Cook in saucepan to make white sauce, cool in refrigerator
1 ½ cup sugar
1 ½ cup butter, softened
1 ½ teaspoosn vanilla extract
Cream butter, sugar and vanilla til light and fluffy, add cold flour mixture and beat like whipped cream.
