Tomato Pear Chutney

6 Tomatoes, large, peeled, diced
3 Granny Smith Apples, peeled, diced
3 Pears, peeled, diced
1 Yellow Onion, medium, peeled, diced
1 Whole Red Bell Pepper, diced
1 Whole Green Bell Pepper, diced
1 cup Golden Raisins
1 cup Sugar
1 cup Apple Cider Vinegar
1 tablespoon fresh Ginger Root, minced
1 tablespoon Mustard Powder
1 teaspoon Salt
½ teaspoon Lemon Zest, minced, optional
½ teaspoon Orange Zest, minced, optional
½ teaspoon ground Cloves

Place all of the ingredients in a one gallon sauce pan and simmer until thickened. Be sure to stir frequently to avoid scorching the bottom. Can in pints and process for 20 minutes in a large pot of boiling water.  Makes 9 pints.
