Strawberries & Cream

Strawberries, black pepper and balsamic vinegar may seem odd companions, but their flavors work magically together to create a delicious and elegant dessert. Begin by adding the smaller amount of vinegar, taste, and then add more if desired.  I also like to use this idea for a dressing on a green salad  -- just add a little more vinegar, some vegetable oil and salt to taste.

1 pint fresh strawberries
2 teaspoons balsamic vinegar
1/4 cup  sugar (or more to taste)
1/8 teaspoon ground ginger
1/8 fresh ground black pepper

Clean and slice strawberries. Add vinegar, sugar, ginger and pepper and toss together. Cover and refrigerate for 1 hour. Stir gently and return to refrigerate.  Serve with cream, whipping cream, or ice cream. Serve within 6-8 hours after preparing.
