Spinach Salad
with Apples, Peanuts and Warm Mustard Dressing

Fresh spinach, washed and stemmed
Red apples, unpeeled, cored and medium dice
blanched, salted peanuts

Arrange spinach on plates or in bowl. Sprinkle with apples and peanuts. Dress with warm mustard dressing.

Mustard Dressing

4 eggs
2 cups cream
2/3 cup white vinegar
1 cup sugar
4 tablespoons Dry (English) Mustard
2 teaspoons salt

Cook in a double boiler until thick.
