Spinach with Sour Cream
From Ann George, Blair, Nebraska -- New Year's Day Brunch 2008

2 packages frozen chopped spinach, thawed
2 tablespoons grated onion
4 eggs at room temperature, beaten
1 cup sour cream
2 cups grated Parmesan cheese
2 tablespoons unbleached flour
4 tablespoons butter, cut into small pieces

Salt and pepper to taste

Cook spinach with grated onion, just until any liquid has evaporated, and then cool slightly. Stir in remaining ingredients (stir until butter has melted) and bake in buttered casserole for approximately one hour in 350-degree oven or until center has set. Do not over bake, as it will separate.
