Sausage & Apples

5 apples (Jonathan or Granny Smith)
1/2 brown sugar
1/2 cup raisins
1 teaspoon cinnamon

1 lb. pork breakfast sausage
or  pork tenderloin medallions

Peel and cut apples in to pieces.  Place apples and sugar in large sauce pan, cover and cook over low heat.  Gently stir occasionally. The as sugar and apples begin to become juice, the heat can be increased slightly. Add raisins and cinnamon and cook until apples are tender.  Add small brown sausage patties or tenderloin medallions. Garnish with walnuts.
