Salmon Patties

2 lbs. fresh (or frozen) Salmon
1/2 cup fresh bread crumbs
1 egg
1/2 onion, finely chopped
finely grated zest of 1 lemon
2 tablespoons fresh herbs
  (chives, parsley, savory, etc.)
1 tablespoon minced garlic
1 tablespoon olive oil
1-2 dashes Tabasco Sauce

Chop salmon into 1/4-inch cubes and place in a mixing bowl.  Add remaining ingredients and mix thoroughly.  Divide mixture into 8 portions, place each on piece of waxed paper and form a tightly packed patty about 1/2-thick.  Place patties (on waxed paper) on a tray and in the freezer for about 15-20 minutes until they become firm.

Heat a small amount of olive oil in a non-stick pan and fry the patties until brown on both sides (about 5-7 minutes on each side.)

Serve with tartar or hollandaise sauce.
