Baked Rice Pudding

from Mother Mildred Kramer.

1 1/2 cup cooked rice
2 eggs, well beaten
1/2 cup sugar
1/3 cup raisins (optional)
1/2 teaspoon salt
1 teaspoon lemon or vanilla extract
1 1/2 cup milk
Dash of nutmeg

Combine sugar, salt and milk with eggs.  Add rice, raisins and extract and pour in well buttered pan.  Sprinkle with nutmeg.  Place in pan of warm water and bake at 350ºF for 50 minutes or until knife inserted comes out clean. Serves 4 or 5.
