Pistachio Pâté


2 tablespoons olive oil
1/4 pound mushrooms, chopped
1/2 cup chopped onions
2 garlic cloves, minced
1/4 cup medium sherry
1 1/2 teaspoon salt
1/2 teaspoon fresh cracked pepper
1/2 teaspoon thyme leaves
1/8 teaspoon nutmeg
1/2 pound ground chicken
1/2 pound ground pork
1/2 pound ground bacon
1/2 cup shelled pistachio nuts
2 tablespoons chopped parsley
1 egg

Heat oil in saucepan over medium heat; cook mushrooms, onion, and garlic until tender, stirring often. Add sherry and seasonings and heat to boiling. Reduce heat and simmer 5 minutes stirring often. Remove from heat. Stir in ground meats, and remaining ingredients. Pack into 2 nut bread loaf pans. Bake at 350° for 1 1/2 hours. Chill. Can be frozen.
