Breakfast Pizzas

2 eggs, whites and yolks separated
1 cup grated Colby or Cheddar cheese
salt & pepper
herbs such as ground rosemary, chopped chives or parsley flakes (optional)
6 slices of crispy fried bacon, cut in halves (cooked breakfast sausage is also good)
2 English Muffins, split

Preheat oven to 375°F.

Beat egg whites until fluffy, but not dry. Beat egg yolks. Fold egg yolks into eggs whites. Carefully fold in cheese and seasonings.

Lay three half-slices of bacon on each English muffin half. Spoon egg mixture on top of each half -- dividing equally between the four halves.

Bake in oven for 10-15 minutes or until nicely brown on top. Service immediately.   Serves two.
