Knackwurst Sausage

1 1/2 pounds pork fat & trimmings
1 pound of lean beef
1/2 teaspoon Morton's Tender-Quick®
1 teaspoon salt
1 teaspoon black pepper
1 1/2 teaspoon mustard seed
4 cloves garlic, crushed
1 teaspoon liquid smoke
1/2 cup water

Grind beef and pork. Mix together all ingredients. Stuff into pork casings. Refrigerate over night. Place in the bottom of a large roasting pan, cover and slowly bake at 250°F for about 1 hour.
