Baked Honey Custard

2 eggs
1/3 cup honey
1/4 teaspoon salt
1/2 teaspoon vanilla
1 3/4 cups milk, scalded
ground nutmeg

Heat oven to 350º F. Beat eggs slightly in medium bowl. Mix honey, salt, vanilla.  Gradually stir in milk.  Pour into five 6-ounce custard cups.  Sprinkle with nutmeg.  Place cups in baking pan on oven rack;  pour very hot water into pan within 1/2 inch of top of cups.

Bake 40-50 minutes or until knife inserted halfway between center and edge comes out clean.  Remove cups from water.  Server warm or cover and refrigerate about 3 hours or until chilled.
