Danish Pork Sandwich

Compote

5 apples
1/2 cup raisins
1/2 brown sugar
1 teaspoon cinnamon

Peel and cut apples in to pieces.  Place apples and sugar in large sauce pan, cover and cook over low heat.  Gently stir occasionally. The as sugar and apples begin to become juice, the heat can be increased slightly. Add raisins and cinnamon and cook until apples are tender.

Sandwich

2 lb. Roast Deli Pork (2 oz. each serving)
1 loaves rye bread (16 slices)

For each serving,  place deli pork on 1 slice of bread. Top with about 1/2 cup of apple compote and garnish with walnuts.
