Creamy Baked Cheesecake

Crust

1 cup flour
2 tablespoons sugar
1/2 cup butter, softened

Heat oven 10 350ºF.  Beat flour, sugar and margarine until dough forms.  Press firmly and evenly against bottom of spring form pan,  9 x 3 inches.  Bake until very light golden brown, about 10 minutes.

Filling

4 packages (8 ounces each) cream cheese, softened
4 eggs
1 1/2 cups sugar
1 tablespoon lemon juice
1 tablespoon vanilla

Beat cream cheese, eggs, sugar, lemon juice and vanilla on medium speed until smooth and fluffy.  Spread over crust. Bake until set, 1 hour 10 minutes to 1 hour 20 minutes.  Refrigerate at least 6 hours.
