County Crust Bread

2 packages yeast
2 cups warm water
1/2 cup sugar
1 tablespoon salt
2 eggs
1/4 cups vegetable oil
6 - 6 1/2 cups flour


Dissolve yeast in warm water in large mixing bowl.  Stir in sugar, salt, eggs and oil with 3 cups flour.  Beat until smooth.  Mix in enough flour to make dough easy to handle.  Knead for 5 minutes and place in a large greased mixing bowl.  Let rise in warm place until doubled.  Punch down, divide into two and shape into loaves.  Bake at 375ºF for 30-35 minutes until golden brown and sound hollow when tapped.
