Country Sausage

4 pounds pork trimmings
5 teaspoons salt
4 teaspoons ground sage
3 teaspoons coarsely ground black pepper
1 teaspoon nutmeg
1 teaspoon sugar

Grind the unseasoned meat with plate of 1/2-inch opening, then mix with seasonings and regrind through a plate with 1/8-inch openings.  Stuff into casings.
