Chicken Salad Variations

4 Servings Basic Chicken Salad

1/2 cup mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups cooked chicken, cut-up
2 stalks celery, slice

Mix mayonnaise, lemon juice, salt and pepper; toss with chicken, and celery.

Variations
Add to or substitute for the chicken any of the following:

1 cup seedless grapes 1 cup mandarin oranges
1 cup apples
1/2 cup nuts, walnuts, cashews, almonds, or peanuts
1/4 cup carrots
4 slices bacon, crisply cooked & crumbled
2 hard cooked eggs
2 cups cooked crab meat, lobster, shrimp, or scallops.
