Bratwurst Sausage

1 1/2 pound coarse ground pork
1/2 pound coarse ground beef
2 teaspoons ground celery seed
2 teaspoons ground caraway seed
1 tablespoon powdered milk
1 egg
2 teaspoons onion powder
1 teaspoons salt
1 teaspoon coarse black pepper
1 tablespoon dried parsley
3 tablespoons beer

Combine all ingredients. Let sit for 1 hour, and mix again. Stuff into casings. Makes 2 pounds

10 pound coarse ground pork
5 pound coarse ground beef
1/4 cup ground celery seed
1/4 cup ground caraway seed
1/2 cup powdered milk
6 egg
1/4 cup onion powder
5 teaspoons salt
6 teaspoon coarse black pepper
1/3 cup dried parsley
1 cup  beer

Combine all ingredients. Let sit for 1 hour, and mix again. Stuff into casings. Makes 15 pounds.
