Baking Powder Biscuits

2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup shortening
3/4 cup milk

Preheat oven to 450ºF.  In large bowl with fork, mix flour, baking powder and salt.  With pastry blender, cut in shortening until mixture resembles coarse crumbs.  Add milk and with fork, mix just until mixture forms soft dough that leaves side of bowl.  Turn onto lightly floured surface; knead 6 to 8 strokes to mix dough thoroughly.  Roll out the dough, 1/2 inch think.  With floured 2-inch biscuit cutter, cut biscuits, using straight downward motion.  Do no twist the cutter.  Place biscuits on un-greased cookie sheet, 1 inch apart.  Press dough trimmings together (don't knead); re-roll and cut until all dough is used.  Bake 12 to 15 minutes until golden. Makes 12 biscuits.
