Victoria Cake
Queen Victoria had been in grief for the death of her husband, Prince Albert.
This Cake was served at the tea party on returning to her official service.

1/2 cup butter, (1 stick)
3/4 cup castor sugar
2 eggs, beaten
1 cup self-raising flour
2 tablespoons raspberry jam

Cream the butter with the sugar till pale and fluffy.  Beat 2 eggs and add gradually to creamed mixture. Carefully fold in half the flour then fold in the rest. Pour into a greased and lined 7-inch round baking tin.  Bake at 375ºF for about 30-40 minutes or until well-risen, and golden.  Cool on a wire rack then slice it half.  Sandwich together with the jam and sprinkle with a little powdered sugar.
