Rhubarb Cake
From Darlene Drefs, Toledo
Ohio. Darlene's husband Rueben is a great grandson of Eva
Hiller Jüngling, a great grandmother to Nathan's Grandmother, Mary
Stahlecker Kramer.
2 cups sugar
2 cups diced rhubarb (sometimes more)
1/2 cup shortening
1 egg
1 cup buttermilk
2 cup flour
1 tsp vanilla
1 tsp baking soda
1 cup brown sugar
2 tsp cinnamon
Dissolve soda in buttermilk. Cream sugar and shortening together. Add egg and
milk and mix well. Add some of the flour over rhubarb in cup.
Add remaining flour and vanilla. Blend in rhubarb into batter and put into
13 x 9-inch pan. Mix brown sugar and cinnamon and sprinkle over top. Bake
at 350°F degrees for 50 minutes.
