Maple-Pumpkin
Pie
Form Nancy Lindblad, Blair,
Nebraska
1 unbaked pie shell,
10-inch
1 can pumpkin,15-onuce
1 can sweetened condensed milk, 14-onuce
2 eggs (beaten well)
1 teaspoon maple flavoring
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
Pecan Topping:
1 egg (beaten)
3 tablespoon dark corn syrup
3 tablespoon firmly packed light brown sugar
1 tablespoon butter, melted
1/2 teaspoon maple flavoring
1 cup chopped pecans
Mix together pumpkin, beaten eggs, flavoring, salt, and
spices. Heat slowly until almost boiling. Pour into pie shell. Bake at 350
for 25-30 min. Protect pie shell from burning. Remove from oven, spoon
Pecan Topping evenly over top. Return to oven, bake 15-20 min. longer or
until golden brown.
Pecan Topping: In small bowl, melt butter and cool. Add beaten egg, corn
syrup, brown sugar, and maple flavoring. Stir in chopped pecans. |
