Hush Puppies
from Cottonwood Station Milling Company, Meriden, Kansas

1 cup corn meal
1/2 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon sugar
1/2 cup onion; chopped
1 can (16 ounce) cream style corn
milk, if needed

Mix dry ingredients.  Add onion and corn.  Mix well.  If more liquid is needed to make desired consistency, add a little milk.

Drop heaping teaspoons into deep hot fat. Fry until golden brown. (They will float to the top when done.)

Yields 10 to 12.

 

Corn Fritters
These corn fritters don't have the corn meal or onions,
but very much the same as the recipe above -- just a little sweeter.

1 1/2 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 can (8-ounce) cream style corn
1/4 cup milk
1 Tablespoon melted butter

Mix dry ingredients.  Mix in corn, milk and butter.  Drop heaping teaspoons into deep hot fat. Fry until golden brown.
