Breakfast Pizzas

2 eggs, whites and yolks separated
1 cup grated Colby or Cheddar cheese
salt & pepper
parsley flakes or other herbs

6 slices of crispy fried bacon, cut in halves 
2 English Muffins, split
paprika for
garnish

Preheat oven to 375°F.

Beat egg whites until fluffy, but not dry. Beat egg yolks. Fold egg yolks into eggs whites. Carefully fold in 3/4 cup of the cheese and seasonings.

Lay three half-slices of bacon on each English muffin half. Spoon egg mixture on top of each half -- dividing equally between the four halves. Garnish with remaining 1/4 cup cheese and light sprinkle with paprika. 

Bake in oven for 10-15 minutes or until nicely brown on top. Serve immediately.   Serves two. 

Variations:  This is also good with cooked breakfast sausage.  To make a large breakfast pizza, use a homemade pizza dough crust and triple the ingredients.
