Banana Curry Sauce

The Hawaiian style savory accompaniment is grilled and pan sired fish.

1/2 teaspoon olive oil
1/2 cup chopped Vidalia or other sweet onion
2 small ripe bananas, 1-inch slices 
1 garlic clove, halved 
1 3/4 teaspoons curry powder 
3/4 cup chicken broth 
1 tablespoon rice vinegar 
1 1/2 teaspoons honey (optional & to taste)
Dash of salt

Heat oil in a medium nonstick skillet over medium-high heat. Add onion, bananas, and garlic; sauté 2 minutes. Add curry powder, and sauté 30 seconds. Add chicken broth, and simmer 5 minutes, stirring occasionally. Bananas will start to brake up.  It may be necessary to use a potato masher to a blender, mush larger pieces.  Look for an oatmeal type consistency. Sauce will think some once transferred to serving bowl. 

Yield 1 cup (serving size: 1/4 cup)
